Chocolate Bark– A crunchy, rich and sweet dessert. I love it. Place a few chunks of these babies out for your family to enjoy, or wrap a bundle up in some tissue paper, and you have a thoughtful homemade gift to pass on this Christmas!
The recipe also only calls for 3 ingredients. Can you feel the stress melting away already? It’s easy as 1 2 3.
A Week of Christmas:
Day 6
Cranberry Hazelnut White Chocolate Bark
Cranberry Hazelnut White Chocolate Bark
Yield: 30 pieces Prep Time: 10 mins Chill Time: 1 hour.
Ingredients
1 pound (500g) high quality white chocolate, chopped 1 cup (250 mL) hazelnuts, toasted 1 cup (250 mL) dried cranberries
Directions:
1. Preheat oven to broil. Line rimmed cookie sheet with wax paper, and set aside.
2. Place whole hazelnuts on a baking sheet, and broil for 2-3 mins until toasted. Watch carefully!
3. In microwave, melt white chocolate in a medium bowl for 30 second bursts. Stir chocolate between zaps with a metal spoon until nicely melted. Add cranberries and toasted hazelnuts to melted chocolate. Stir until coated, then pour mixture onto prepared baking sheet. Spread evenly until it measures about 1/4 inch thick. Refrigerate until chocolate is cold and hard.
Note: Not a white chocolate, cranberry or hazelnut fan? No problem! Substitute the white chocolate for high quality dark, instead of cranberries, add candied ginger and toss in some roasted almonds in place of the hazelnuts.

If you’re in Vancouver like me today, the air is all blustery and fresh. The morning sun is making everything look like it’s dipped in gold. I am crossing my fingers for another one of these to shine down on us around 5pm! I hope you have a wonderful day full of mid-week productivity.
